More Than Meat. It's Our Mission.
We are butchers, farmers, and food lovers dedicated to reviving the connection between you and your food. This is our story.
Our Mission
Our mission is to make exceptional, ethically-sourced, and artisan-butchered meat accessible to every household. We exist to challenge the opaque, industrialized food system by providing a transparent, trustworthy, and convenient alternative. We are committed to fostering a community built on a shared passion for incredible food, championing the independent farmers who are stewards of our land, and preserving the time-honored craft of butchery. Every decision we make, from the pasture to your plate, is guided by a simple principle: to deliver a product and an experience that is uncompromising in its quality, its integrity, and its flavor. We aim to not only feed our customers but to educate and inspire them, empowering them to cook with confidence and to understand the profound impact of choosing better meat.
Our Vision
We envision a future where every meal is an opportunity for connection—connection to the farmers who raise our food, to the traditions of our craft, and to the friends and family we share our tables with. Our vision is to become the most trusted name in meat delivery nationwide, recognized not for our size, but for the depth of our commitment to quality and sustainability. We see a world where regenerative agriculture is the norm, not the exception, and where consumers are empowered with knowledge, making conscious choices that benefit their health, the environment, and local economies. We aspire to build a resilient, decentralized food system that supports a network of thriving family farms and sets a new, unimpeachable standard for the entire industry. Ultimately, our vision is to help create a more delicious, more honest, and more sustainable world, one prime cut at a time.
Our Journey From a Single Block
2015: The Spark
The story of Prime Cuts begins not in a boardroom, but in a small, family-owned butcher shop. Our founder, David Chen, a third-generation butcher, grew increasingly disillusioned with the meat industry. He watched as customers became more disconnected from their food, and as supermarkets, with their pre-packaged, mass-produced offerings, prioritized shelf life over flavor and ethics. He saw the traditional art of butchery, the knowledge of whole-animal utilization, and the personal relationship between a butcher and a customer beginning to fade. The spark was a simple question: "What if we could bring the quality, trust, and craft of the neighborhood butcher shop to everyone, using the tools of the modern world?" This question became an obsession, a blueprint for a new kind of food company.
2018: The First Delivery
After years of meticulous planning, building relationships with a handful of trusted, local farmers who shared his vision, and perfecting a cold-chain logistics model in his garage, David made the first official Prime Cuts delivery. The first "warehouse" was a collection of chest freezers. The first "delivery vehicle" was his own station wagon. He personally took the orders, cut the meat, packed the boxes with dry ice, and drove them to the doorsteps of his first twenty customers—friends, family, and a few brave locals who found his simple website. The feedback was immediate and powerful. People were astounded by the difference in taste, the vibrant color of the meat, and the story behind it. This initial, overwhelming response confirmed his belief: people were hungry for better meat and a better way to buy it.
2021: Building the Team
Word of mouth spread like wildfire. The station wagon and chest freezers were no longer sufficient. This was the year Prime Cuts evolved from a one-man passion project into a true company. David brought on two key partners: Maria Flores, a logistics expert with a passion for sustainable supply chains, and Samuel Jones, a master butcher with an encyclopedic knowledge of dry-aging and charcuterie. Together, they moved into their first dedicated facility—a small but state-of-the-art butchery and fulfillment center. They expanded their network of partner farms, developed their signature vacuum-seal packaging, and launched a proper e-commerce website. This was the year our core values were formally written, not as a corporate exercise, but as a codification of the principles that had guided the company from its very first delivery.
2025 & Beyond: The Future
Today, Prime Cuts Delivery serves thousands of families across multiple states, but our founding principles remain our north star. As we look to the future, our goals are ambitious. We plan to expand our "pasture-to-plate" model to include lamb, heritage poultry, and wild-caught seafood, applying the same rigorous standards of sourcing and quality. We are investing heavily in technology to provide even greater transparency, allowing customers to trace their specific cut back to the farm and even the pasture it came from. Our commitment to sustainability is deepening, with goals to achieve a carbon-neutral delivery footprint by 2030 and to invest a portion of our profits into grants for young farmers transitioning to regenerative agriculture. The journey is far from over; in many ways, it's just beginning. We will continue to innovate and grow, but we will never outgrow the simple belief that sparked it all: that everyone deserves access to truly great meat.
The Pillars of Our Promise
Unwavering Quality
Quality is not a goal; it is our baseline. It is in the genetics of the animals we select, the richness of the pastures they graze, the precision of our butchers' knives, and the science of our dry-aging process. We relentlessly pursue the pinnacle of flavor and texture, refusing to cut corners or accept mediocrity. If a cut does not meet our exacting standards, it does not leave our facility. This unwavering commitment is our promise to you.
Radical Transparency
We believe you have the right to know everything about the food you eat. We operate with radical transparency, from our sourcing practices and farm partners to our butchery techniques and pricing. We provide clear, honest information, demystifying the meat industry and empowering you to make informed choices. Trust is earned through honesty, and we are committed to earning yours with every order.
Sustainable Stewardship
We are stewards of the land and the craft. Our commitment to sustainability extends from promoting regenerative agriculture that heals the soil to minimizing our operational footprint with recyclable packaging and optimized logistics. We believe in a business model that is not extractive but restorative, ensuring that our planet and our traditions are healthy for generations to come.
Community Focused
We are more than a company; we are a community of farmers, butchers, employees, and customers united by a love for good food. We are dedicated to supporting the economic viability of our independent partner farms and investing in the communities we serve. We strive to build lasting relationships, fostering a sense of connection and shared purpose from the farm to the fork.
The Hands Behind the Craft

David Chen
Founder & CEOA third-generation butcher with a vision for the future of food. David's passion for quality and his frustration with the modern food industry led him to create Prime Cuts. He blends time-honored family techniques with modern logistics to bring the craft butcher experience to your door. His philosophy is simple: "If I wouldn't serve it to my own family, I won't sell it."

Samuel "Sam" Jones
Head ButcherWith over 30 years of experience behind the block, Sam is a true master of his craft. His expertise in whole-animal butchery and dry-aging is the heart of our operation. Sam's hands-on approach ensures every cut is perfect, and he personally trains every butcher on our team, passing down the art and science that defines our quality.

Maria Flores
Head of Operations & SustainabilityMaria is the logistical genius who makes our "farm-to-fork" promise a reality. She designed our entire cold-chain system, from warehouse fulfillment to our climate-controlled delivery fleet. With a deep commitment to the planet, she also spearheads all of our sustainability initiatives, constantly finding ways to reduce our footprint.
The Butcher's Art: A Deeper Cut
In an age of automation and mass production, we hold fast to the belief that butchery is an art form—a delicate dance of anatomy, skill, and intuition. It's a craft that cannot be replicated by a machine. Our facility is not a factory; it's a workshop, a studio where our artisans transform pristine primals into culinary masterpieces. The process begins with respect for the animal. We practice whole-animal butchery, meaning we strive to utilize every part, a sustainable practice that honors the life of the animal and challenges our butchers to master a wider range of cuts. This philosophy pushes us beyond the familiar steaks and roasts, allowing us to offer unique cuts that are full of flavor and character.
Our signature dry-aging process is a perfect example of our dedication. It is a patient art. In our specially designed coolers, where temperature, humidity, and airflow are controlled to the decimal point, massive sections of beef hang for weeks. This is not passive waiting; it is active transformation. Natural enzymes work their magic, tenderizing the muscle fibers on a cellular level, while slow moisture evaporation concentrates the beef’s intrinsic flavor into something dense, complex, and utterly unforgettable. It’s a costly, time-consuming process that the industrial food system has abandoned, but we believe it is essential to achieving the pinnacle of taste. Every cut is then hand-trimmed with the precision of a sculptor. Our butchers read the grain of the muscle, the distribution of the marbling, and trim away excess fat while leaving just enough to ensure a succulent and flavorful cooking experience. This is the art that defines Prime Cuts.

Farmer Spotlight: Green Valley Pastures
Meet the Miller family of Green Valley Pastures in rural Iowa, one of our founding farm partners. For four generations, the Millers have been practicing a form of agriculture that today is called "regenerative"—a holistic system that works in harmony with nature rather than against it. They don't just raise cattle; they cultivate an entire ecosystem. Their Angus herd roams freely across hundreds of acres of diverse pastureland, grazing on a complex diet of native grasses, clover, and alfalfa. This rotational grazing system constantly moves the herd, which mimics the natural patterns of wild herbivores. This practice prevents overgrazing, naturally fertilizes the soil, and improves its capacity to hold water and sequester carbon from the atmosphere.
The Millers are true stewards of the land. They have dedicated sections of their farm to pollinator habitats, have restored wetlands, and maintain wooded areas to promote biodiversity. They know their animals individually, ensuring a stress-free environment that is central to both humane treatment and the ultimate quality of the meat. Their partnership with Prime Cuts is built on shared values and mutual respect. We pay them a significant premium over commodity prices, ensuring their family farm is not just sustainable, but profitable and resilient for generations to come. When you buy our beef, you are directly supporting families like the Millers and investing in a healthier future for our food system and our planet.
Investing in Our Community
We believe a successful business has a responsibility to lift up the community around it. Our impact goes beyond the plate.
Fighting Food Insecurity
Through our 'Prime Giving' program, we partner with local food banks and shelters. For every 25 boxes we sell, we donate a box of high-quality ground beef and nutritious cuts to families in need. We believe everyone deserves access to high-protein, nutrient-dense food, and we are committed to being a reliable partner in the fight against hunger in our communities.
Supporting Future Farmers
We have established the 'Prime Cuts Agricultural Grant' to support the next generation of farmers. A portion of our annual profits is dedicated to providing grants to young farmers and agricultural students who are committed to pursuing regenerative and sustainable farming practices. By investing in education and innovation, we hope to help build a more resilient food system.
Employee Empowerment
Our team is our greatest asset. We are committed to being a living wage employer, providing full health benefits and paid time off for all full-time employees, from our butchers to our delivery drivers. We also invest in continuous education, offering butchery apprenticeships and food safety certifications to foster professional growth and mastery of the craft.
